Il Primosale di Toscana

A very fresh cheese made from mixed cow’s and sheep’s milk. It is salted in brine and is ready for consumption a few hours after production. The milk-white paste is soft and elastic, the rind is absent. This Tuscan primosale cheese wins you over with its tender paste and its sweet, delicate flavour that is pleasing to all palates. The cow’s milk, present in greater quantity, gives it its typical sweetness, while the addition of sheep’s milk makes it particularly tasty and savoury. Ideal for salads and fresh dishes, also excellent with seasonal vegetables and cured meats.
