Pascoli di Maremma

It is a medium-aged pecorino cheese. It has a very white, solid, chalky and crumbly texture. The taste is round and eveloping, the crust is treated with tomato paste and ground black pepper. This cheese takes its name from the milk collection area: the Tuscan Maremma, whichi s particularly suited to sheep farming.
